What exactly is umami?

The molecule behind it is glutamate, an amino acid that is one of the building blocks of protein and is present, in free form, in countless everyday foods. When free glutamate lands on the tongue, it is detected by dedicated umami taste receptors (notably the T1R1/T1R3 receptor pair identified by taste researchers), which is a big part of why scientists now recognise umami as a genuine basic taste rather than a mix of the other four. A 2015 review in BioMed Research International traces exactly this: decades of receptor studies confirming umami’s place as the fifth taste.
Where did umami come from — and why seaweed?
The story starts, fittingly, with seaweed. In 1907 the Japanese chemist Kikunae Ikeda was eating a bowl of dashi, the kelp broth at the heart of Japanese cooking, and noticed a savoury taste he could not file under sweet, salty, sour or bitter — the same quality he had met in tomatoes, asparagus, meat and cheese while studying in Germany. According to the Umami Information Center, Ikeda took kombu kelp into his laboratory at Tokyo Imperial University and, in 1908, isolated glutamic acid as the compound responsible. He named the taste umami and patented a way to make it into a stable seasoning, receiving his patent on 25 July 1908.

Why does seaweed taste so savoury?
Because seaweed is loaded with free glutamate. Chemically, the glutamate in a strip of kombu is identical to the glutamate in a sun-ripened San Marzano or a wedge of aged cheese. The ocean simply concentrates it beautifully — which is why a spoonful of seaweed flakes can do the savoury work of a long-simmered stock.
What is umami synergy, and why does broth taste so deep?
Here is the part that makes cooks fall in love with seaweed. Glutamate is not the only umami compound — there are also nucleotides such as inosinate (abundant in dried bonito, cured meats and fish) and guanylate (found in dried mushrooms). On their own each tastes savoury. Together, they do something remarkable: they multiply.
When glutamate meets inosinate, the perceived umami does not simply add up — it can jump several times higher than glutamate alone. This is why traditional ichiban dashi, made from glutamate-rich kombu and inosinate-rich dried bonito, tastes so much deeper than either ingredient by itself. The everyday lesson is simple: pair a glutamate source with a nucleotide source and savoury flavour blooms.
