Ingredients
Serves 4 (one generous sharing bowl)
- 100 g popcorn kernels
- 2 tbsp (30 ml) extra-virgin olive oil
- 30 g butter, melted — or 2 more tbsp olive oil for a fully plant-based bowl
- 2 tsp (about 4 g) KelpEat Kelp – 100% Seaweed flakes, finely crushed
- 1 tbsp nutritional yeast (optional, for extra depth)
- Fine sea salt, to taste
- A pinch of chilli flakes or smoked paprika (optional)
Method
- Make the kelp seasoning. Crush the kelp flakes to a fine, almost powdery texture with a mortar and pestle, a spice grinder or just your fingertips. Mix with a small pinch of fine sea salt and the nutritional yeast, if using. Fine means clingy: big flakes slide off popcorn, kelp dust hugs every curve.
- Heat the oil. Pour the olive oil into a large, heavy-bottomed pot, drop in 3 kernels, cover and set over medium-high heat.
- Prime the kernels. When all 3 test kernels have popped, add the rest in an even layer, cover, and pull the pot off the heat for 30 seconds — this evens out the temperature so almost everything pops together.
- Pop. Return the pot to the heat and cook, shaking it now and then, until the popping slows to one pop every 2–3 seconds. Take it off the heat and uncover carefully.
- Butter. Drizzle the melted butter over the hot popcorn in two or three additions, tossing well after each so every piece gets a light, even coat.
- Season. Sprinkle the kelp seasoning over the popcorn a little at a time, tossing between additions. Taste, adjust with salt or a pinch of chilli, and serve immediately, while it still crackles.

Can I use an air popper or microwave popcorn?
Yes — pop the same 100 g of kernels however you like, then toss with the melted butter and kelp seasoning. The butter (or oil) matters: it is what makes the kelp stick.

Whole flakes are great in broths and doughs, but on popcorn they slide to the bottom of the bowl. Crushed to a coarse powder, the kelp clings to the butter and seasons every bite.
